4-Cheese Pimiento Spread


• 12-oz. white cheddar cheese

• 8-oz. mild yellow cheddar cheese

• 4-oz. Parmesan cheese

• 4-oz. feta or Gorgonzola cheese (all cheeses finely shredded)

• 4-oz. jar diced pimiento

• 2 t. sweet pickle juice

• 3 T. mustard

• 1 c. mayonnaise


• Drain pimientos and discard liquid.

• Process cheese in a food processor until smooth, stopping occasionally to scrape down the sides.

• Add remaining ingredients and process until well-blended.

• To shorten prep time, use shredded cheese and hand mix all ingredients. Chill if desired.

• Use as a topping on a variety of crackers and breads to create mouthwatering hors d’oeuvres.
