Breakfast Burrito

Ingredients

• 2 large flour tortillas

• 3 slices bacon

• 4 eggs

• 1/4 c. cheddar

• 1/4 c. mushrooms, sliced

• 1 (4-oz.) jar diced pimientos, drained

• 2 T. butter or margarine

Directions

• Warm tortillas in oven.

• Fry bacon until crisp and lay on paper towels to drain.

• Crumble bacon and mix with eggs, cheese, mushrooms and pimientos in a bowl.

• Melt butter in skillet, then pour egg mixture into skillet over medium heat, scrambling and cooking until firm. (Bacon drippings may be reserved and used to grease skillet instead of butter.)

• Place tortillas on plates, then spoon mixture down the center of each tortilla and wrap.

• Experiment with ingredients for a variety of flavors.

• Yield: 2 servings.
