White Cheddar, Pimiento and Jalapeño Mix


• 8-oz. sharp white cheddar cheese, cubed or shredded

• 4-oz. jar diced pimientos

• 1 medium jalapeño pepper, seeded and finely minced

• 1/2 c. mayonnaise


• Drain pimientos and discard liquid.

• Process cheese in a food processor until smooth, stopping occasionally to scrape down the sides.

• Add remaining ingredients and process until well-blended.

• To shorten prep time, use shredded cheese and hand mix all ingredients. Chill if desired.

• Use as a topping on a variety of crackers and breads to create mouthwatering hors d’oeuvres.
