Maple-Rum Glazed Sweet Potatoes

Ingredients

• 29-ounce can Dunbar sweet potatoes, drained

• 1/4 cup brown sugar

• 1/2 cup maple syrup

• 1/4 cup white raisins

• 1/4 cup dark rum

• 2 Granny Smith apples

• 1/4 teaspoon cinnamon

• 2 ounces lemon juice

• 1/4 teaspoon nutmeg

• 1/4 stick butter

• 1/4 teaspoon mace

Directions

• Peel and core the apples, then slice into 1/6th wedges.

• Place apple wedges in bowl with the lemon juice and cover to prevent browning.

• Put apples, sweet potatoes and white raisins in an oven-proof baking dish and set aside.

• In a saucepan over medium heat, heat butter, brown sugar, maple syrup, rum, cinnamon, nutmeg and mace.

• Pour glaze over sweet potatoes and apples.

• Bake for 20 minutes at 400°.
