Orange-Spiced Sweet Potatoes


• 29-ounce can Dunbar sweet potatoes

• 1/8 teaspoon allspice

• 1/4 teaspoon maple extract

• 1/4 cup orange juice

• 2 tablespoons cornstarch

• 1/4 teaspoon grated nutmeg

• 1/4 cup water

• 1/8 teaspoon cinnamon

• 4 sprigs fresh parsley, chopped

• 2 tablespoons brown sugar


• Drain and reserve liquid from sweet potatoes and place sweet potatoes in an ovenproof dish.

• Combine liquid from the sweet potatoes, orange juice, nutmeg, cinnamon, brown sugar, allspice and maple extract in a large saucepan.

• Heat to a boil.

• Mix cornstarch with water to make slurry, then whisk into sweet potato liquid.

• Allow cornstarch to thicken liquid to a light sauce consistency that will coat the back of a spoon.

• Remove from heat.

• Pour orange-spice sauce over sweet potatoes and place in a 400° oven for 25 minutes.

• Remove from oven and garnish with chopped parsley.

• Yields six 5-ounce servings.
