Directions
• Preheat oven to 350°. • Drain sweet potatoes. • Puree sweet potatoes in a food processor, then add sugar, flour, baking soda and vanilla. • Pulse food processor to add eggs one at a time. • Pulse in softened butter. • Lightly grease a 2-quart ovenproof dish with butter. • Sprinkle dish with additional sugar to coat sides and bottom. • Place sweet potato mixture in pan and bake for 45 minutes. |
