Directions
• Prepare pasta according to package directions, omitting salt and oil. • Keep pasta warm. • Drain Roasted peppers thorougly. • Process peppers and next four ingredients in a food processor until smooth, scraping down the sides. • Pour the mixture into a large skillet. • Cook over medium temperature for 5 minutes, stirring often, until thoroughly heated. • Add the cooked shrimp and heat for 2 to 3 minutes, stirring occasionally until heated through. • Remove mixture from heat and serve over pasta. • Garnish with basil. • Yield: 6 servings. |
